Hey, there! Today, I’m spilling the beans on a recipe that has rescued me from countless ‘what’s for dinner?’ Garlic Parmesan Chicken Skewers. The best part is, you don’t need a bbq or charcoal grill. These oven-grilled chicken skewers tastes just as good, without needing an outdoor grill. 

Ingredients for Garlic Parmesan Chicken Skewers

Chicken Marinade

  • 6 chicken thighs, cubed
  • 2 tbsp olive oil
  • Lemon zest
  • ¼ tsp paprika powder
  • ¼ tsp Italian seasoning
  • ⅛ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp black pepper


  • 4 tbsp unsalted butter
  • 2 tbsp minced garlic
  • Fresh parsley
  • 3 tbsp grated parmesan
  • Lemon zest 
  • A pinch of salt
  • Red pepper flakes

How to make garlic parmesan chicken skewers

Marinate the chicken 

  • In a bowl, combine chicken thighs with olive oil, lemon zest, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper.
  • Marinate for at least 30 minutes or overnight for better flavor.

Prepare the Sauce

  • Melt butter in a pan, add minced garlic, and sauté until fragrant.
  • Turn off the heat, and stir in chopped fresh parsley, grated parmesan, salt, and red pepper flakes. Set aside.

Thread and grill the Skewers in the Oven 

  • Preheat the oven to 420° F. Thread marinated chicken onto soaked wooden skewers.
  • Grill skewers for 30-40 minutes.  Turning and glazing the chicken with the sauce occasionally until the chicken is cooked through and has a nice char, the chicken should reach 170° F internal temperature. 
  • Tip: your chicken might not be as charred as expected. Use a flame torch on the chicken right after you take them out, this will give the chicken a nice char on the top.  

Glaze with Parmesan Sauce

  • Brush the chicken skewers with the prepared parmesan sauce right after you take them out of the oven.

Serve and Enjoy

  • Garnish with additional parmesan or fresh parsley.

  • Soak Those Skewers: Don’t let your wooden skewers go into the grilling battle unarmed. Soak them in water for about 30 minutes before threading the chicken. This prevents them from catching fire on the grill.
  • Evenly thread skewers: Thread chicken pieces of similar size onto the skewers for even cooking. This ensures that each morsel reaches perfection at the same time.
  • Don’t Overcrowd: Give each skewer some space when grilling. Allow heat to circulate, ensuring that each skewer cooks evenly.
  • Basting: Keep the chicken moist and flavorful by basting it with the marinade or sauce while grilling. This adds an extra layer of taste and ensures juiciness.
  • Timing: Use a meat thermometer to determine when your chicken skewers are ready. The internal temperature should reach 165°F (74°C).
  • Grill in the oven over a baking rack: this will allow the heat to circulate and simulate the outdoor grill effect.

The most reliable method is to use a meat thermometer and ensure that the internal temperature of the chicken reaches 165°F (74°C). Insert the thermometer into the thickest part of the chicken without touching the skewer. 

If you don’t have a thermometer, another indicator is the chicken should feel firm to the touch, and the skewers should have a beautiful golden-brown color with a slight char.

Certainly! You can use chicken breast for these skewers. While chicken thighs are known for their juiciness, chicken breast works well too, especially if you’re looking for a leaner option. To make them tender, make sure to not overcook the chicken breast on the grill.
