How to make garlic parmesan chicken skewers

Marinate the chicken

  • In a bowl, combine olive oil, lemon zest, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper.
  • Add chicken thighs, ensuring they are evenly coated. Marinate for at least 30 minutes or overnight for maximum flavor.

Prepare the Sauce

  • Melt butter in a pan, add minced garlic, and sauté until fragrant.
  • Turn off the heat, and stir in chopped fresh parsley, grated parmesan, salt, and red pepper flakes. Set aside.

Thread and grill the Skewers in the Oven

  • Preheat the oven to 390° F. Thread marinated chicken onto soaked wooden skewers.
  • Grill skewers for 30-40 minutes.  Turning and glazing the chicken with the sauce occasionally until the chicken is cooked through and has a nice char, the chicken should reach 165° F internal temperature.
  • Tip: your chicken might not be as charred as expected. Use a flame torch on the chicken right after you take them out, this will give the chicken a nice char on the top.

Glaze with Parmesan Sauce

  • Brush the chicken skewers with the prepared parmesan sauce right after you take them out of the oven.

Serve and Enjoy

  • Garnish with additional parmesan and fresh parsley.
  • Serve these delectable Garlic Parmesan Chicken Skewers with your favorite sides.

Tips to make perfect chicken skewers

  • Soak Those Skewers: Don’t let your wooden skewers go into the grilling battle unarmed. Soak them in water for about 30 minutes before threading the chicken. This prevents them from catching fire on the grill.
  • Uniformity is Key:  Thread chicken pieces of similar size onto the skewers for even cooking. This ensures that each morsel reaches perfection at the same time. Leave a bit of space between the chicken pieces on the skewer. This allows heat to circulate, ensuring that each piece cooks uniformly.
  • Don’t Overcrowd: Give each piece of chicken its personal space on the grill. Overcrowding can lead to uneven cooking and might make your skewers look more like a chicken traffic jam.
  • Basting: Keep the chicken moist and flavorful by basting it with the marinade or sauce while grilling. This adds an extra layer of taste and ensures juiciness.
  • Timing is Everything: Use a meat thermometer to determine when your chicken skewers are ready. The internal temperature should reach 165°F (74°C). No one likes an undercooked surprise!
  • Resting: Let the skewers rest for a few minutes before diving in. This allows the juices to be redistributed, ensuring a moist and flavorful experience with every bite.
  • Grill in the oven over a baking rack: this will allow the heat to circulate and simulate the outdoor grill effect.

How do you know your chicken skewers are done?

The most reliable method is to use a meat thermometer and ensure that the internal temperature of the chicken reaches 165°F (74°C). Insert the thermometer into the thickest part of the chicken without touching the skewer.

If you don’t have a thermometer, another indicator is that the juices running from the chicken should be clear, and the meat should no longer be pink. Additionally, the chicken should feel firm to the touch, and the exterior should have a beautiful golden-brown color with a slight char.

Can you use chicken breast instead of chicken thighs?

Certainly! You can absolutely use chicken breast for these skewers. While chicken thighs are known for their juiciness, chicken breast works well too, especially if you’re looking for a leaner option. To ensure tenderness, it’s essential not to overcook the chicken breast on the grill. Consider marinating the breast pieces for extra flavor and moisture.

What do you pair with garlic parmesan chicken skewers?

Pairing your garlic parmesan chicken skewers with complementary sides enhances the overall dining experience. Consider serving these skewers with:

  1. Grilled Vegetables: Charred veggies like bell peppers, zucchini, and cherry tomatoes add a burst of color and freshness. Toss them in olive oil, salt, and pepper before grilling.
  1. Herbed Rice or Quinoa: A bed of aromatic rice or quinoa, seasoned with herbs like parsley or basil, makes a delightful and filling accompaniment.
  1. Creamy Garlic Parmesan Dip: Whip up a creamy dip using ingredients like Greek yogurt, garlic, and parmesan. It serves as a flavorful condiment for dipping.
  1. Garlic Bread or Pita: Carbs are a welcome addition. Serve with garlic bread or warm pita to mop up any delicious marinade or sauce.
  1. Lemon Wedges: Squeeze some fresh lemon over the skewers for a citrusy kick that brightens up the dish.
  1. Roasted Potatoes: Roasted or grilled potatoes seasoned with herbs and garlic can be a hearty and satisfying side.
  1. Tzatziki Sauce: This yogurt-based sauce with cucumber and dill adds a cool and tangy element that complements the richness of the chicken.
