Chicken Marinade
- 4 chicken thighs cubed
- 2 tbsp olive oil
- Lemon zest
- ¼ tsp paprika powder
- ¼ tsp Italian seasoning
- ⅛ tsp salt
- ½ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
Sauce
- 4 tbsp unsalted butter
- 2 tbsp minced garlic
- Fresh parsley
- 3 tbsp grated parmesan
- Lemon zest
- A pinch of salt
- Red pepper flakes
Marinate the chicken
In a bowl, combine chicken thighs with olive oil, lemon zest, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper.
Marinate for at least 30 minutes or overnight for better flavor.
Prepare the Sauce
Melt butter in a pan, add minced garlic, and sauté until fragrant.
Turn off the heat, and stir in chopped fresh parsley, grated parmesan, salt, and red pepper flakes. Set aside.
Thread and grill the Skewers in the Oven
Preheat the oven to 420° F. Thread marinated chicken onto soaked wooden skewers.
Grill skewers for 30-40 minutes. Turning and glazing the chicken with the sauce occasionally until the chicken is cooked through and has a nice char, the chicken should reach 170° F internal temperature.
Tip: your chicken might not be as charred as expected. Use a flame torch on the chicken right after you take them out, this will give the chicken a nice char.
