  • If you’re using shrimp, start by marinating them for extra flavor. In a bowl, combine the shrimp with a pinch of salt, ground pepper, olive oil, and cayenne powder. Let them marinate while you prepare the other ingredients.
  • In a separate bowl, whisk four large eggs until they’re well beaten. Add milk to the eggs to create a creamy texture in your fried rice. Cook the eggs separately in a pan, scramble them gently until they’re just set, and set them aside for later.

  • Toss in the thawed peas, carrots, and corn. 
  • Add in the cooked shrimp or your preferred protein, and the scrambled eggs
  • Drizzle in soy sauce and oyster sauce. Add sugar to balance the flavors if desired.
  • Garnish with a handful of fried shallots and ground black pepper.
