Ingredients

  • 1 tbsp miso paste
  • 2 tbsp mayonnaise
  • 1 ½ tbsp olive oil
  • 1 tbsp ginger grated
  • ½ tbsp sugar
  • ½ tbsp rice vinegar
  • ½ tsp white/black pepper

Instructions

  • In a small mixing bowl/jar, combine the miso paste and mayonnaise, olive oil and vinegar. Whisk or mix well until smooth and creamy.
  • Add the grated ginger, sugar, and white or black pepper to the mixture. Stir until all the ingredients are evenly combined.
  • Season to taste. You can add more sugar or chili pepper for a bit of heat.
  • Cover with a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.

Notes

  1. Prevent Clumping: Whisk the miso paste and mayonnaise with vinegar first. This helps break down any clumps in the miso paste and ensures a smooth, creamy consistency.
  2. Enhance Flavor with Sesame: you might want to add sesame seeds or sesame oil to the dressing. This will add a nuttiness that pairs perfectly with the savory miso.
  3. Opt for Fresh Ginger: While ground ginger can work in a pinch, fresh is best. The aroma kick of fresh ginger adds a bright note to the dressing.
  4. Choose Your Mayo: You can use either American mayonnaise or Japanese mayo. While they may have slight differences in flavors, both types of mayo work well in this recipe.
  5. Balance Flavors: Taste your dressing as you go and adjust the ingredients. If you prefer a sweeter dressing, add a bit more sugar. For a tangier taste, increase the amount of rice vinegar.
