For the meat sauce:
- 1 lb ground beef
- Olive oil
- 1 shallot grated
- 1 carrot finely chopped
- 1 celery stalk finely chopped
- 2 garlic cloves minced
- 1 ½ tablespoons tomato paste
- 1 glass red wine about ¾ cup
- 1 ½ cups marinara sauce
- 1 cup chicken stock (plus more as needed
- 2 bay leaves
- A few sprigs of fresh thyme or ½ teaspoon dried
- Salt to taste
For serving:
- Pappardelle or rigatoni cooked al dente
- Grated parmesan cheese
- Fresh basil leaves
Brown the Beef
Heat a large skillet over high heat.
Add the ground beef and cook until browned with crispy bits, about 6–8 minutes.
Transfer to a bowl and set aside.
Sauté the Veggies
In the same pan, reduce the heat to medium.
Add olive oil, followed by the grated shallot, chopped carrot, and celery.
Cook for 3–5 minutes until soft and slightly golden.
Add Flavor Layers
