Main Ingredients Linguine or pasta of your choice 3 chicken thighs/breasts Chicken Olive oil ¼ tsp salt ¼ tsp ground black pepper ¼ tsp cayenne powder Sauce 2 tbsp unsalted butter ¾ cup onion minced 1 tsp garlic minced ½ tsp oregano ½ tsp salt ¼ tsp ground cumin ¼ tbsp sugar 1 tbsp chipotle pepper in adobo sauce blended 2 cups heavy cream
Start by cooking the pasta according to the package instructions. Drain and set aside.
Season the chicken thighs with olive oil, salt, black pepper, and cayenne powder.
In a large skillet, saute minced garlic with olive oil over medium-high heat. Cook the chicken until golden brown and cooked through. Set aside.
In the same skillet, add butter. Sauté minced onion and garlic until fragrant.
Stir in oregano, salt, ground cumin, sugar, and chipotle pepper in adobo sauce . Use a blender or hand blender to blend the sauce mixture to a smooth consistency. Then cook for an additional 2 minutes.
Pour in the heavy cream, stirring continuously. Let the sauce simmer until it thickens.
Toss in the cooked pasta, ensuring it’s well coated in the spicy chipotle sauce.
Slice the cooked chicken into strips and add them to the pasta
Garnish with parsley and Parmesan.
