  • Linguine or pasta of your choice
  • 3 chicken thighs/breasts

Chicken

  • Olive oil
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp cayenne powder

Sauce

  • 2 tbsp unsalted butter
  • ¾ cup onion minced
  • 1 tsp garlic minced
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp ground cumin
  • ¼ tbsp sugar
  • 1 tbsp chipotle pepper in adobo sauce blended
  • 2 cups heavy cream

Garnishing

  • Curly parsley
  • Parmesan

Instructions
 

  • Start by cooking the pasta according to the package instructions. Drain and set aside.
  • Season the chicken thighs with olive oil, salt, black pepper, and cayenne powder.
  • In a large skillet, saute minced garlic with olive oil over medium-high heat. Cook the chicken until golden brown and cooked through. Set aside.
  • In the same skillet, add butter. Sauté minced onion and garlic until fragrant.
  • Stir in oregano, salt, ground cumin, sugar, and chipotle pepper in adobo sauce.
  • Use a blender or hand blender to blend the sauce mixture to a smooth consistency. Then cook for an additional 2 minutes.
  • Pour in the heavy cream, stirring continuously. Let the sauce simmer until it thickens.
  • Toss in the cooked pasta, ensuring it’s well coated in the spicy chipotle sauce.
  • Slice the cooked chicken into strips and add them to the pasta
  • Garnish with parsley and Parmesan.
