Spam Fried Rice

Whenever I’m craving something quick and packed with flavor, I always turn to Spam Fried Rice. It’s super easy to make and hits all the right notes for a savory meal.

Ingredients
  

  • 3 cups of rice
  • ½ spam cubed
  • 5 eggs whisked
  • 10 oz vegetables
  • 1 tsp sugar
  • ¼ tsp salt
  • 3 tbsp sweet soy glaze
  • 2 tbsp neutral cooking oil

Garnishing

  • Fresh parsley
  • Black pepper
  • Red chili flakes optional

Instructions
 

  • If you don’t have day-old leftover rice, start by cooking the rice and set it aside to cool. This ensures your fried rice doesn’t end up mushy.
  • In a large skillet or wok over medium heat, lay out a thin layer of whisked eggs, treating it more like a crepe than a scrambled egg. Allow it to cook until it forms a delicate, golden crepe. Repeat the process, creating multiple layers of egg crepes.
  • Once you have several layers, gently stack them, and then slice them into square pieces. Cooking the egg like this will add a unique texture and look to your Spam Fried Rice.
  • In the same skillet or wok, add 2 tbsp neutral oil, and cook the spam over medium heat until it turns golden brown and crispy. Set the spam aside.
  • Add the cooled rice to the pan, breaking up any clumps, and stir for 4-6 minutes.
  • Add the cooked spam, eggs, and vegetables, and mix well.
  • Pour the sweet soy glaze over the rice and continue to stir-fry until everything is well combined and heated through.
  • Season to taste with salt and sugar.
  • Garnish with black pepper, red chili flakes, and fresh parsley.
