If you don’t have day-old leftover rice, start by cooking the rice and set it aside to cool. This ensures your fried rice doesn’t end up mushy.
In a large skillet or wok over medium heat, lay out a thin layer of whisked eggs, treating it more like a crepe than a scrambled egg. Allow it to cook until it forms a delicate, golden crepe. Repeat the process, creating multiple layers of egg crepes.
Once you have several layers, gently stack them, and then slice them into square pieces. Cooking the egg like this will add a unique texture and look to your Spam Fried Rice.
In the same skillet or wok, add 2 tbsp neutral oil, and cook the spam over medium heat until it turns golden brown and crispy. Set the spam aside.
Add the cooled rice to the pan, breaking up any clumps, and stir for 4-6 minutes.
Add the cooked spam, eggs, and vegetables, and mix well.
Pour the sweet soy glaze over the rice and continue to stir-fry until everything is well combined and heated through. Season to taste with salt and sugar.
