Chop your pork belly into bite-sized pieces.
In a hot pan, sear the pork for 5 minutes on high heat, then set aside.
In the same pan, saute the garlic and ginger until becoming golden brown.
Add soy sauce, dark soy sauce, honey, vinegar, oyster sauce, and sugar.
Add one cup of water and simmer the sauce for 5-10 minutes with the lid covered.
Remove the ginger and add the pork.
Add another cup of water and the peppercorn.
Continue simmering on low heat until there is 20% liquid left.
