If you’re using shrimp, start by marinating them for extra flavor. In a bowl, combine the shrimp with a pinch of salt, ground pepper, olive oil, and cayenne powder. Let them marinate while you prepare the other ingredients.
In a separate bowl, whisk four large eggs until they’re well beaten. Add milk to the eggs to create a creamy texture in your fried rice. Cook the eggs separately in a pan, scramble them gently until they’re just set, and set them aside for later.
In a separate pan, heat 2 tablespoons of olive oil over medium-high heat. Saute garlic until it becomes fragrant. Add the marinated shrimp and cook them until they turn pink and opaque. Set them aside for later.
In a large pan or wok, melt 2 tablespoons of butter over medium-high heat.
Add the 4 cups of rice, using a spatula to break up any clumps and ensure even distribution. Continue stir fry the rice for 10-15 minutes.
Toss in the thawed peas, carrots, and corn.
Add in the cooked shrimp or your preferred protein, and the scrambled eggs
Drizzle in soy sauce and oyster sauce. Add sugar to balance the flavors if desired.
Garnish with a handful of fried shallots and ground black pepper.
