Chili oil fried rice is the ultimate fusion of flavors, combining the heat of chili oil with the goodness of fried rice. It’s a dish that is as versatile as it is delicious – perfect for a quick weeknight dinner.
In a bowl, add the egg yolk to the rice and mix well, set aside.
In a skillet or wok, add chili oil along with the whitehead of green onion. Sauté for a minute until fragrant.
Once hot, add the beaten eggs white and scramble until just cooked through.
Add the rice to the skillet, breaking up any clumps with a spatula. Stir-fry for a few minutes until the rice is heated through and starts to crisp up slightly.
Sprinkle the curry powder and salt over and stir-fry everything together for another minute or two. Until everything is well combined.
Taste the fried rice and adjust the seasoning if needed, adding more salt or chili oil to taste.
Once everything is ready, transfer the fried rice to serving plates. If desired, top with mayo and a fried egg.
