Chili Oil Fried Rice

Chili oil fried rice is the ultimate fusion of flavors, combining the heat of chili oil with the goodness of fried rice. It’s a dish that is as versatile as it is delicious – perfect for a quick weeknight dinner.

Ingredients
  

  • 2 cups cooked rice preferably day-old
  • 4 eggs white and yolk separated
  • Green onion finely chopped
  • Whitehead of green onion thinly chopped
  • 2 tablespoons chili oil
  • 1 teaspoon curry powder
  • ¼ tsp salt

Garnishing

  • Mayo
  • Green onion
  • Fried egg

Instructions
 

  • In a bowl, add the egg yolk to the rice and mix well, set aside.
  • In a skillet or wok, add chili oil along with the whitehead of green onion. Sauté for a minute until fragrant.
  • Once hot, add the beaten eggs white and scramble until just cooked through.
  • Add the rice to the skillet, breaking up any clumps with a spatula. Stir-fry for a few minutes until the rice is heated through and starts to crisp up slightly.
  • Sprinkle the curry powder and salt over and stir-fry everything together for another minute or two. Until everything is well combined.
  • Taste the fried rice and adjust the seasoning if needed, adding more salt or chili oil to taste.
  • Once everything is ready, transfer the fried rice to serving plates. If desired, top with mayo and a fried egg.
